Food Truck/ Selling food

Hey guys, I am the owner of a large food truck in Arizona called Your Behind BBQ. I was wondering if anyone knew the right direction for me to go or who i should ask about rules and selling food down in mexico? Im looking at setting up shop selling BBQ on big weekends. Im wondering if there is any kind of laws or requirements i need to do?

I am no expert but I am sure there is a lot of red tape you will have to navigate. I doubt the locals make it easy for gringos to take away some of their coveted food/drink selling business to tourists.
 
Last year someone tried to set up a BBQ resturant. It lasted a few months and closed. I do not remember seeing anyone there.
There food may have been very bad and that is why they closed. I understand there are a ton of laws for a gringo to do business.
