Fishing Morua over Christmas/New Years

I have fished Morua a few times with so-so luck over the past couple of years. Can anyone recommend a good technique for this time of year? I mostly fish low tide, right at the mouth of the estuary, preferring greater tide swings. I've caught a few corvina, triggerfish and flounder, but not with any regularity. It really seems to be hit or miss (yeah, I know, welcome to fishing).
Just looking for some tips on what might work at this time of year. Thanks in advance.

You can also tip the hooks with some shrimp squid or fish.
