I've had it a couple of times. I even bought some at Super Ley and made it once. My husband loves it. If you like mushrooms you'll like it. Not for me.

How do you prepare it? I love mushrooms.

Sauteed in olive oil or butter, with a bit of finely chopped garlic and/or onion and salt. In fancier Mexican restaurants it's served as a side dish. Most people put it in quesadillas, though. It's much more of a central Mexican thing than a northern Mexican thing. Huitlacoche is a Nahuatl (Mexica or Aztec) word.

I guess it would. Maybe Linguini with Huitlacoche instead of Clam Sauce?
