Sauteed in olive oil or butter, with a bit of finely chopped garlic and/or onion and salt. In fancier Mexican restaurants it's served as a side dish. Most people put it in quesadillas, though. It's much more of a central Mexican thing than a northern Mexican thing. Huitlacoche is a Nahuatl (Mexica or Aztec) word.
