Might try the filets, though. Normally the only way to make them tough is to grill them for a few hours.

That would be interesting to see. During WWII my father's company in Cleveland made sectional assemblies for that aircraft.
They also made them for the Wildcat and the TBF Torpedo aircraft. Wish I knew exactly which sections. Not many of those guys alive
yet to ask.
FYI...Safeway now has a series of Mexican meats in package form, pre-marinated. One of these is Al Pastor so I decided to try it.
I put all my stuff together. Onions, pineapple for grilling with the meat, cilantro, tacos and limes for the taco and a green salsa for the grand finale.
